Recipe of the Week - Pecan Tassies

My favorite pie is pecan pie.  These little treats are the closest mini version that I have found.  It soothes my pecan pie craving and they are easier to make than a whole pie.  Enjoy!

Ingredients:
1/2 cup butter or margarine, softened
3 ounces cream cheese, softened
1 cup all-purpose flour

2 tablespoons butter or margarine, melted
3/4 cup brown sugar, packed
1 egg
1 teaspoon vanilla
1 1/2 cups pecans, chopped

Your first 3 ingredients make the dough for the tart shells.
Beat butter and cream cheese until smooth.  Add flour; mix until soft dough forms.  
Cover; chill at least 1 hr or overnight.

Preheat oven to 350 degrees.  Shape dough into 1-in balls. 
Place balls into cups of greased Mini-muffin pan.   
Dip Mini-Tart Shaper in flour; press into dough to form tart shell.

For filling, combine all ingredients in small bowl; mix well. 
 Fill tart shells evenly with filling mixture. 
 Bake 20-25 min or until light golden brown. 
Remove from muffin pan to cooling rack.  Cool completely.  
Sprinkle with powdered sugar, if desired.
